I would accept Lizards and Chickens as well.
I would want to be
Misty Olszewski. She's not directly involved in the main story's high-stakes conflicts, which makes her relatively safe. Misty's role is interesting because she has a unique perspective on Night City, blending the mystical with the harsh realities of the cyberpunk world. She interacts with the protagonist, V, and other main characters. This connection to the game's events without being in direct danger makes her an intriguing choice. And she seems to be the best one in the game to emotionally handle loved ones deaths in a non destructive way.

The Roach Coach vendor who serves the famous Night City burritos. These vendors are serving up massive, improbably stuffed burritos that V can buy to restore health. Imagine spending your days in a cyberpunk dystopia making burritos that somehow contain a full meal's worth of calories in a single bite. Plus, you'd get to interact with a wide range of characters, from corporate suits to street punks, all while maintaining a somewhat humorous detachment from the city's intense dramas.
